These simple energy balls taste like chocolate, coffee, and coconut! They're naturally sweetened with dates, packed with healthy fats, and include functional mushrooms.
Additional shredded coconut or cocoa powder, if desired
Directions
In food processor, pulse nuts until finely chopped.
Add dates, coconut, nut butter, coconut oil, mocha mix, honey, and salt. Process until mixture starts to come together. Add cacao nibs, if using.
Pulse mixture a few more times, until it starts to turn into a paste. You should be able to squish it together with your fingers.
Dump mix out onto a clean surface. Use a spoon or spring-loaded ice cream scoop to divide mixture into 18 pieces. Roll each between your hands to form a ball.

If desired, roll balls in cocoa powder or shredded coconut. Enjoy!
