Matcha Coconut Energy bites come together in just a few minutes. All you need to do is throw the ingredients in a food processor and pulse until everything comes together. We love having these around for camping trips and day hikes. They're a perfect little burst of energy and make for a tasty afternoon pick-me-up that satisfies the sweet tooth!
About ½ cup shredded coconut, for rolling (optional)
Directions
Place nuts in food processor and pulse a few times, until roughly chopped.
Add dates and coconut; pulse a few times.
Add coconut oil, Matcha Latte powder, and honey. Run processor until everything comes together and nuts are chopped fairly small. When you smash the mixture between your fingers, it should stick together.
Scoop mixture into about 18 pieces, depending on how big you want them, and roll them into balls.
Place extra shredded coconut in a small bowl. Roll balls in coconut, pressing lightly to adhere.
