Beat the heat with this iced matcha topped with luscious strawberry cold foam. The fluffy 3-ingredient cold foam topping is made with strawberry powder & aquafaba, making it totally vegan, ultra luxurious, and perfect for a hot day.

Ingredients

3 tablespoons CinderBird Matcha powder

2 ounces hot water

Ice
-
6 ounces cold water
-
½ cup aquafaba liquid (from 1 can of chickpeas)

2/3 cup sugar
-
½ cup freeze-dried strawberries, crushed into a powder

1 teaspoon vanilla (optional)
Iced Matcha:
Vegan Strawberry Cold Foam:
Directions
For the iced matcha:
Whisk together matcha latte powder and hot water in a tall glass.
Top with plenty of ice.
Add cold water; stir to combine.
For the strawberry cold foam:
Whisk aquafaba liquid with an electric mixer. Start adding the sugar gradually, about a tablespoon at a time, until all the sugar has been added.
Continue whipping until soft peaks form, about 8-10 minutes (this can vary). Add strawberry powder and vanilla, if using. Whisk to combine.
Top iced matcha with a generous heap of strawberry cold foam. Enjoy!
Recipe Note
It can take a little while to get the aquafaba to whip up, but I promise it will get there! Whip it until it reaches soft peaks or until it's a texture that you like.
This recipe for cold foam will make a lot more than you need to top 1 latte. The topping stores well in the refrigerator for several days. You may need to give it a little whisking to revive it after it sits for a day. Feel free to cut the recipe in half!
