Ingredients
3 large ripe bananas
¼ cup unsalted butter, melted
1 teaspoon vanilla
2 cups quick oats
2/3 cup almond flour
½ cup peanut butter powder
3 tablespoons CinderBird Coffee Latte powder
1 teaspoon baking powder
½ teaspoon sea salt
¾ cup dark chocolate, chopped
Directions
Preheat oven to 350 F. Line 2 baking sheets with parchment paper.
Mash bananas thoroughly in a large mixing bowl. Add melted butter and vanilla and mix until blended.
Add all dry ingredients - oats, almond flour, peanut butter powder, CinderBird Coffee Latte powder, salt, and baking powder. Stir to mix; fold in chopped chocolate.
Scoop mix into rounded balls with a spoon or ice cream scoop and place at least one inch apart on a lined baking sheet. Press down on each dough ball a little - they won’t spread as much as traditional cookies.
